Happy Groundhog Day!

Happy Groundhog Day!

Today, Punxsutawney Phil emerged from his burrow at approximately 7:20 a.m. in Punxsutawney, Penn. With a crowd of nearly 40,000 people, he left his burrow only to see his shadow signifying that winter weather will continue for six more weeks.

Mr. Phil’s forecasts have only been accurate 39% of the time. Let's hope this is one of the times he got it wrong. Last year he predicted an early spring and we ended up with record amounts of snow.

I mean, today's high is 66 degrees.

To celebrate Groundhog Day, I brought these mini angel food cupcakes to work this morning to share with my co-workers. I frosted them with a whipped cream icing and sprinkled them with Spring blue sugar crystals.

Happy Spring! Well, almost.
(Who's counting?)

Cheers,
Christi

I'm gonna be in the minority here I bet, but I'm hoping he's right. As much as I love our temps in the 60s (and today 71) I enjoy experiencing 4 seasons. We've yet to see winter in the deep south this year :( I just want winter for a couple of weeks, then bring on Spring!!

UPDATE: looks like y'all will be getting your wish. As I've just read via Michelle's blog, evidently the great Southern groundhog General Beauregard Lee of Georgia, did not see his shadow and is proclaiming an early Spring all across Dixie. http://is.gd/9EZWtp Ha!

Dan! So happy you got to taste these little cuties before they were gobbled up!

Hi, Ally!
While I love warm weather, I am right there with your thoughts on four seasons. I love having all four seasons, and I especially love a good snow storm - although we don't get many of those in Arkansas. :) For now, I'll leave it in Phil and Gen. Beauregard's hands. ;)

Here's to hoping for some Southern snow this winter!
